Who doesn’t want cheesecake? Even more important, who would refuse a chocolate cheesecake? This delectable treat is a favorite no matter what the occasion is. If you’ve been wanting to make one yourself for some time now, then the recipe below will surely be a good start.
Ingredients:
- 1 1/4 cups graham cracker crumbs
- 2 tbsp. sugar
- 3 tbsp. butter or margarine melted
- 2 pounds cream cheese
- 1 cup sugar
- 8 ounces sour cream
- 1/4 cup cocoa
- 2 pcs. eggs
- 1 cup flour
- 3/4 cup heavy whipping cream
Directions:
In a 5 quart mixing bowl, place 2 pounds of cream cheese and 1 cup granulated sugar. Mix on low speed until cream cheese is softened and smooth. Then, place 8 ounces of sour cream in bowl and continue mixing until well blended. Add 2 eggs and mix for another couple of minutes. Afterwards, add 1 cup flour, 1/4 cup cocoa, and 3/4 cup heavy whipping cream. Mix on second speed until smooth and creamy.
At this stage, the cheesecake mixture should be fluffy – similar to ice cream as it comes out of the machine. Prepare 10 inch x 2 inches spring form pan. In a large bowl, place the graham cracker crumbs, 2 tablespoons sugar, and melted butter or margarine. Whisk them together with a wire whisk until nicely combined. Brush a little softened butter onto the sides of the spring form pan so that the crumbs have something to hold on to. Then, place the crumbs on the sides and bottom of the pan. Now, add the chocolate cheesecake mix slowly into the pan. Be careful not to disturb the crumbs too much.
Preheat oven to 275 degrees F. Once the temperature is reached, place the chocolate cheesecake in it and bake for 55 minutes. Shut off the oven and let the cheesecake cool in there for 3 hours. Let it cool on the table for another 1 1/2 hours. Then, place it in the refrigerator for about 2-3 hours. Serve as desired.
